  • 2 tbsp butter Butter (Unsalted)
  • 1/2 cup onion Onion (Finely chopped)
  • 2 cups wild mushrooms Wild Mushrooms (Sliced)
  • 2 cups potatoes Potatoes (Diced)
  • 4 cups chicken broth Chicken Broth (Low-sodium)
  • 1 cup heavy cream Heavy Cream
  • 1 tsp salt Salt (To taste)
  • 1/2 tsp black pepper Black Pepper (To taste)
  • 1/4 cup parsley Parsley (Fresh, chopped for garnish)

Instructions
 

  • In a large pot, melt the butter over medium heat.
  • Add finely chopped onion and sliced wild mushrooms. Sauté until the mushrooms are tender and the onion is translucent.
  • Stir in diced potatoes, then pour in low-sodium chicken broth. Bring to a boil and let it simmer until the potatoes are cooked and tender.
  • Using an immersion blender, blend the soup until it reaches a creamy consistency.
  • Stir in heavy cream and season with salt and black pepper to taste.
  • Serve the Creamy Wild Mushroom and Potato Chowder hot, garnished with fresh chopped parsley.
